Restaurant Review: Madame Tong's Redeux

The food will continue and build on the Asian- infused theme, with Executive Chef Frank Coe, (from the well-received Wild Goose in Cutchogue) heading up the kitchen. An Irishman who studied in Lyon, France, then moved on to London, Saudi Arabia and the Asian-Pacific, Coe finally settled in New York in the '90s, working at Le Bernardin and Daniel.

Madame Tong's Redeux is positioning itself not only as a restaurant, but as a late night hotspot, featureing DJs on Friday and Saturday nights from about 10 p.m. to midnight. Tables will be removed from the interior room to make space for dancing - not to heavy-duty house music, but to good dance tunes, and food will be served until midnight. On Sundays, starting in late July, Tongs will have a cocktail garden party in the beautiful outdoor space with mellow yet upbeat DJ music.

Madame Tong's Redeux An Asian Standby Rises Again

Open Monday through Saturday, Sundays for brunch; 256 Elm St, Southampton

The menu's been overhauled 100%, starting with simple snacks of steamed bok choy or stir-fired veggies before shifting to apps like handmade pork/veggie dumplings w/soyscallion sauce, tamarind glazed spare ribs, and tuna & beet tartar w/ pomegranate ponzu drizzle, which unlike ponzi drizzles won't suck all the sauce out of you. Sushi rolls run from Alaskan lump crab w/ spiced "Harichi" mayo to tempura-fried lobster knuckles/claws, while less rice-y fare includes crispy Long Island duck breast, Thai chicken in coconut lime curry, and a tuna-steak-topped vegetable stir fry called the Tuna "Ching Chong Chew", satisfying Rosie O'Donnell's voracious appetite for racism. And food. In addition to the interior bar, the outdoor sushi stations have been converted into sauce stands, all to sling four variations of mojitos (each made with a different kind of infused rum) and margs like the watermelon/jalapeñoinfused tequila/agave/lime Pink Orchid — so tasty you'll ask the bartender to remake it again and again.

Back for another go, and under the same ownership as the Upper West Side's Prohibition, the recent incarnation boasts a new look a completely overhauled menu. Highlights include a tuna & beet tartar with pomegranate ponzu drizzle and Thai chicken in coconut lime curry. Other improvements lead to outdoor "sauce stands, all to sling four variations of mojitos."

Open: Madame Tong's Redeux in Southampton

New owners Ian Duke (who runs Prohibition restaurant and bar in Manhattan) and David Hilty continue to offer Asian fare at the retooled restaurant and nightspot. Diners will find appetizers that include tuna-and-beet tartare, tamarind-glazed spare ribs, shrimp shumai and cold sesame noodles; main dishes such as miso-and-melon glazed halibut, crisp duck breast in a passionfruit, plum and pomegranate sauce; seared tuna with a vegetable stir-fry; and Thai-style chicken, in coconut-lime curry sauce. Sushi rolls also are on the menu. Madame Tong's Redeux is open Wednesday to Sunday for dinner. Sunday brunch is expected, too, according to manager David Denekas.
